Simple Cucumber salad

With Spring here, this means more fresh foods coming in season. I am so loving this new cucumber salad. It’s quick and easy, refreshing and satisfying. This cucumber salad has a creamy dressing that really matches this crunchy and fresh texture. And…I need new low fat snacks. This one…hits the spot!

…anytime I consider a recipe to blog, I typically approach my strongest critic on the matter. Cookies- I ask the kids (very particular). Potatoes —I ask my husband. Boogie food— my husband or some close friends of ours. Salads —my Mom, she’s a rabbit.

This time, for cucumber salad —I would ask no one other than my daughters Makena and Phoenix. They are teenagers and experts in subjects such as so. OH, want to know their answer? “Huh, Mom, really good 👍. Two thumbs up!” Yet, the truth is I know the second they take that micro bite. They will either hand me back the bowl and try to say something nice, or keep the bowl and continue with it. This time, they kept it and ate as much as they could as I asked them questions of how it could be better. The response? No, it’s good (crunch, crunch, crunch). Done!

My Parents and I have made a pact. We are eating healthier (well, most of the time)! Focusing on a high protein diet. Cucumbers, clearly, aren’t secretly packing a protein punch 😆, but, I do need a snack. I love snacks. Anyone that tells you they don’t need snacks is a liar and you should never believe them. They are not to be trusted members of the community (probably a politician 😵‍💫)

Everyone needs snacks and snacks need to be eaten. They also need to be able to store easily and be accessed easily, you know…All things snacks are good for.

Luckily, if you store this in an airtight container like this, you will be able to grab for it up to a week. I recommend giving it a shake or a toss before eating so the dressing coats it again.

Cucumber salad is a 2 minute preparation. Maybe 5 minutes if you take your time. Easy to prepare and such a great grab and go too!

Cut the cucumbers and carrots in bite size pieces. I like to slice some of the green off the sides cause it’s so pretty. (Make sure your veggies are washed). Place your chopped veggies in a large bowl.

Add sour cream, rice vinegar, dill seed, honey, and salt and pepper to the bowl. Toss it well, and your done!

Keep in your refrigerator in an air-tight bowl. It is easy access and keeps it crisp!

I can’t say I believe in diets. Even with a background in Nursing. I know they work but I also know if you don’t stay on it the rest of your life (yeah, not me!) then things eventually go back to where they started.

I believe you have to love what you eat and enjoy every bunny bite. Cucumbers and carrots that is 😆….

I need to figure out what else to eat. OH, that’s almost everyday. Why is this so much fun for me? 🤒

Fresh Cucumber salad with a creamy sweet dressing.

Ingredients

  • 2 2 cucumbers

  • 1 1 carrot

  • 1/4th Cup 1/4th sour cream

  • 4 Tbsp 4 rice vinegar

  • 1 Small pinch 1 dill seed

  • 2 Tsp 2 honey

  • 1 Pinch 1 salt and pepper

Directions

  • Get all supplies on the table including your ingredients, a rubber spatula, and a mixing bowl.
  • Cut the head and tail of the cucumber. Slice the middle, then thinly on the sides. I like to keep some dark green because it’s pretty. Make bite size slices. Place in the bowl.
  • Wash your carrot, then cut similar to the cucumber. Add to the bowl.
  • Add the sour cream, vinegar, dill seed, honey, salt and pepper. Toss well and enjoy!

  • Good to keep in refrigerator for up to 4 days in an air-tight container. Shake or stir before using.
