Ok, this Chicken Crack Chicken Dip is a recipe that is so delicious it can be used for so many things—like a FOOTBALL par-tay! It is warm, cheesy, savory, hearty, and creamy spicy (with Frank’s Wing Sauce). You can use it as a dip, in a sandwich, for an appetizer, or for a meal (that is IF you have leftovers).

In this post, I show you how to make a Crock-pot(able) so you can set it up in the morning or afternoon or make it as a Casserole Dish. In the Crock-pot, it is ready from the first ingredient flop-in-the-pot to your next bite in 2-3 hours. Of course, you can also cook it in the oven and have it done in less than 30 minutes as well. I’m going to show you both ways 💃!

Casserole way!

Making Chicken Crack Chicken in a Crock-pot

~Using a 4.5 quart Crock-Pot put on low and add all ingredients starting from the first (raw and thawed chicken breasts) to the cojita cheese. You can also use a cooked Rotisserie from the store! Please cheat…no need to work hard.

Leave some of the Colby Jack (about 1 cup) until the end to see the cheesiness on top.

~Cook for 2 to 4 hours on low or until the chicken is done. Check after 2 hours and shred the chicken. If it doesn’t shred, it needs more time (up to 2 more hours).

~put the Crock-Pot on warm if the chicken has cooked.

~Once that chicken is ready, shred it as fine as possible. I also use a knife to break it up into small pieces. Bite-size is the size to go for!

~Stir really well, then add the cheese on top.

This can sit for several hours. Give it an occasional stir if needed. Use firm chips like Fritos (first recommendation), Pita Chips, Naan, or good crackers like Carr’s.

How to cook Chicken Crack Chicken Dip (love this way!) COOKED IN A CASSEROLE dish:

~Grab a Rotisserie from the store.

~Shred that dude into pieces. Add all ingredients except a cup of cheese to a 9×12 casserole dish. Sprinkle the shredded cheese on top.

~Cover with foil and cook at 375 for 20 minutes. It should be hot and bubbly.

~ Remove the foil and set the oven to BROIL on HIGH for exactly 2 minutes (change BAKE to BROIL).

NOTE: Bacon for the top is optional. I feel like the only reason it is there is to appeal to people. It doesn’t add more flavor; the dip has it all. But then, who says “no” to bacon? No friend of mine!

This is my favorite way yet; it takes a little more time on the front end but is finished faster. To stay warm, keep in a warmer or covered. The crock-pot can also be used just to keep warm.

Use a strong Chip for the Dip

This is a hearty dip, so you want to ensure you have a good vessel for eating. I love the Carr’s Crackers; they can hold anything. But something a bit more salty is right up this Dip’s alley. Salted Pita Chips (made by Whole Foods) or a large Tortilla Chip like On the Border is perfect. Most of the time, I like to put out a couple of options and put a spoon in the dip so people can choose. Honestly, use Fritos. It’s perfect with them 110%.

Use your leftover Dip for so much.

The next day, there was just a tiny bit left. Kevin tore off the end of a French Bread loaf and stuffed it like a sandwich. But other ways it can be used are:

  • Add a slice of cheese and the dip, and make it into a panini! Yum.
  • Grilled Cheese, what?! Yes. With some crunchy onions.
  • top a salad with the chicken dip and add Blue Cheese
  • Use as breakfast in eggs like Migas.
  • Make it into a spicy Omelette and top it with more wing sauce or Tabasco

Ingredients

  • 4 4 chicken breasts (or one rotisserie, shredded)

  • 1 Cup 1 sour cream

  • 1/2 Cup 1/2 mayonnaise

  • 1 Can 1 Rotel tomatoes (optional)

  • 1 Tbsp 1 garlic powder

  • 1 Cup 1 Frank’s™ Wing Sauce

  • 1 1 yellow bell pepper (optional)

  • 1 1 orange bell pepper (optional)

  • 1 1 jalapeño (optional)

  • 1 Cup 1 Cojita cheese (or any Mexican white cheese)

  • 1 Lb 1 Shredded Colby jack cheese, sub monterrey jack

  • crumbled bacon (optional), for topping

Directions fOR crock-pot

  • In a crock pot on low, add all ingredients except the Colby jack cheese.
  • Cook for 2-4 hours until chicken is cooked. Shred the chicken well and stir.
    May need to cut chicken or put in a blender to break up big pieces (do this before the cheese goes in). Stir in 3/4th of cheese and leave the other 1/4th for on top.
  • Serve on toasted French Bread, in a jalapeño boat, crackers, or Fritos.
  • DIRECTIONS FOR CASSEROLE DISH (takes 22 minutes to cook)
  • Get out all ingredients. (Chicken must be cooked for this method. I suggest a rotisserie.) Make sure all ingredients are cut bite-size.
  • Using a large mixing bowl, mix all ingredients except 1 cup of shredded cheese.
  • Pour into a 9X12 casserole dish. Add cheese on top. Cover with foil and BAKE 375 for 20 minutes or until hot and bubbly.
  • Take the foil off, then change oven settings for BROIL on HIGH for exactly 2 minutes. Cheese should be slightly roasted on top. Let cool, and serve soon. Keep warm by covering it if taking it to a party.
