I’m in love. This Poblano and Pot Roast Egg White Casserole took me less than 30 minutes from first cut to first bite, and oh my goodness! The flavors are incredible! Smoky poblano and hearty pot roast as a healthy breakfast casserole is perfectly delicious and fills up your belly. The cheese is perfectly burnt on the sides and has a meaty center, add some truffled hot sauce and call it a day. PERFECTO!

This would be a perfect pot roast and poblano omelette but as a breakfast casserole will feed many more, and easier! Honestly, Kevin and I could have probably eaten the whole thing but it can feed up to 6 people in a 9×12 pan. By the way, do you know how hard it was for me to not add a carb? It killed my carb-loving soul for a just a minute. I was feeling a bit lost without hash browns on the bottom (you should do this 😝) or diced (cooked and roasted) potatoes and bits of butter. It’ll be ok if you do (😆I’m a bad influence) .

Easy Breakfast Casserole making process

~I simply just cut up my vegetables, sprayed some Pam (really wanted butter, but that’s ok), whipped up some egg whites and Cajun seasoning.

~Mix together and put in a 9×12 pan. Bake at 400 degrees for 20 minutes.

~Take out, add shredded cheese then change oven to broil on high, then set timer for 2 minutes.

Literally in less than 30 minutes from first cut to first bite, it’s easier than you think.

Sometimes I just don’t want to get up and make food. There are a lot of mornings I want to just sit and drink my morning cup of tea and stare off or read a book. Staring off into space is a great way to confuse the kids. I enjoy it 😊.

Ingredients

  • 2 2 poblanos, diced

  • 1/2 1/2 sweet onion, sliced

  • spray oil (like Pam), (sub salted butter)

  • 2 Cups 2 cooked pot roast

  • 12 12 egg whites (or 2 cups liquid egg whites)

  • 2 Tsp 2 Worcestershire

  • 2 Tsp 2 Cajun seasoning

  • 1 Cup 1 cheddar cheese

  • favorite hot sauce ( like this truffle hot sauce, yum!)

Directions

  • Get out all your equipment and ingredients. Preheat oven to 400 degrees. Cut up poblanos and onions to bite size pieces.
  • Put poblanos, onions, and pot roast on the bottom of the 9×12 pan. Spray with Pam or (wipe pan with butter). (See alternate way for crispier vegetables in notes below 👇)
  • Get your 12 egg whites, Worcestershire and whisk with Cajun seasoning in a bowl. Put on top of vegetables and pot roast. Put shredded cheddar cheese on top. (See note for broiling cheese topping)
  • Cook for 20 minutes. If you want the cheese crispier, broil on high for only 2 minutes. Done!

  • 9×12 stainless steel pan

Notes

  • If you like your vegetables more tender, sauté in a pan then place on the bottom of the pan with the pot roast.
  • For crispier cheese topping I like to cook the eggs (400 degrees for 20 minutes) then add cheese and broil on high for 2 minutes.
