I love Indian food. Warm, cozy, and full of robust flavor, this meatball sandwich gave me second thoughts about the traditional way. Indian food can be intimidating, but don’t let it scare you. There are a couple of secrets to design that make it great.
Don’t let Indian food scare you.

It’s easy to say, “This is different, “and “No, thank you.” Really, you must try this. Best served hot off the saucepan on a crusty baguette and topped with cilantro and goat cheese, it will change your life and those around you. In addition to a great meal, you could get an engagement as well 😉.
Secret ways to make the best Indian food.
- Blooming the spices: This means aromatizing 👃🏽and warming the spices (curry, chili powder, tumerice, etc.) first when you saute the veggies. Warming the dry spices in the pan may look weird, but this makes the spices open up the flavor. NOTE: If your veggies start drying, add splashes of the diced tomatoes to bring the moisture back into the pan.
- Make the sauce, then add the meatballs. The sauce is the star, so making the sauce is key.
- Having all ingredients: Variations of the ingredients are allowed. As long as it says “curry” on it of some sort, it will be fine. Another example is “ancho chili powder.” Don’t worry if you don’t have ancho chili powder; regular chili powder is fine. You will find complete success as long as you have each ingredient in its close form!
How to Make Marry Me Meatballs: Curried Meatball Sandwich (with Video)
Step one: Gather Supplies; Prep veggies.
Gather all the ingredients, as well as a large saucepan and wooden spoon. Dice the onion, jalapeno, and ginger.
Step Two: Sautee veggies.
Place your saucepan over medium heat and add a dab of ghee or oil. Sautee the onion, jalapeno, and ginger until wilted, about 2 minutes.
Step three: Add spices and some tomatoes.
Turn your heat down to low and add chili powder, turmeric, curry, cardamon, and tomato billion to the veggie mix. It will start to chunk up, and you will start to smell the aroma (this is called blooming the spices). These spices will burn quickly, so grab your can of diced tomatoes and pour some on the spices to help them not burn. Stir well.
Step four: Add the rest of the tomatoes.
Add the rest of the diced tomatoes and tomato sauce. Stir well until bubbly. The piping hot sauce will cook the frozen meatballs.
Step five: Add meatballs.
Add the frozen meatballs and stir well, making sure none stick together. Reduce the heat again (if not done already) and cover for about 10-15 minutes. You can peek at them about halfway and stir, but it’s not necessary.
Step Six: Toast bread, add goat cheese and meatballs.
While the meatballs are cooking, toast your demi-baguette or sandwich bread in the oven or air fryer. Get out the goat cheese and cilantro. Once toasted, spread the goat cheese on one side of the bread and add a heaping spoonful of meatballs to the other side. Garnish with cilantro, and give it a big bite.
