
Warm, gooey, crunchy, and fruity…this strawberry rainbow rice crispy treat is just that, a treat. This is a chance to make a mess in the kitchen, have an easy and fun time together, and even be able to squeeze in some dried fruits. The kids love to make this, and they love to eat it. Oh, and guess what? I’m an “almond mom” now. 😆
I’ll be honest with you. I picked on this all day long, and so did the kids. They love dried fruit and rice crispies. This combination of crunchy and chewy sweetness just works. It’s a refreshing take on traditional Rice Crispy Treats.
An almond mom vibe.
When I trialed this recipe, the feedback was outstanding—responses like “um…” and “oh” while grabbing a handful. Yet, the best response was, “MOM. This is so ‘almond’ of you.” I had heard this before and paid no attention, but this time, I asked, “ ….uh…huh?”
Evidently, an almond mom is a mom who doesn’t eat junk food. Well, ya little turd nugget, I’ll have you know there is a lot of processed sugar between that processed rice, my dear. So, naturally, an almond mom tops it with some real fruits. She’s lucky I didn’t squeeze in some sweet potatoes—’cause that might have worked 😁.
Crispy Confession
To that note, I have a confession…I was the one who stole the strawberries out of the Special K Cereal. It was me!! I feel awful about it, but it did come straight with the truth to the kids. I couldn’t find my HUGE bag of dried strawberries, so the Special K was robbed. There you have it, I feel better. How “almond” of me to confess this.
Easy to make Strawberry Rainbow Rice Crispy Treats (with video)
Seriously, my kids went wild for these. I sacrificed becoming an “almond mom” for implementing dried fruit but…as if 🤓😁! I love it…there is an excellent toasted crunch with gooey marshmellows and tart and tender fruit. It all pairs really well.
Step One: Gather Ingredients and Supplies
Gather ingredients, a large pot, a good spatula, a 9×13 pan, and a knife.
Cut any dried fruit you’d like in bite-size pieces (they are also great just crunched up)
Step two: Add ingredients over Medium heat
Melt butter in the large pot and add rice crispies. Add marshmallow cream and divide among the cereal. The cereal will start to toast as the marshmallow cream melts.
Now, add the small marshmellows and fold those in.
NOTE: If you don’t want toasted rice crispies, then melt the butter and the marshmellow together and fold the cereal into the warm cream.
Step three: Fold in the Strawberries
Add 4 oz. Dried strawberries and fold into the warm crispys.
(If they start to break, no worries; even the little pieces make a big bang of taste 😎)
Step four: Spread onto a pan. Add dried fruit.
Spread into a greased 9×13 pan.
Add all your dried fruit to make it look like a rainbow. Strawberries, blueberries, bananas, mangos, etc. (here is a link to get a variety pack without having to buy a ton of dried fruit:
Add melted almond bark (melting chocolate) across the top. (see the instructions below)
The Vanilla Drizzle (my nizzel 😂)

In a microwave safe bowl (Tupperware® is my favorite plastics) melt chopped almond bark and milk together for 30 seconds, stir, then keep adding 30 more seconds until smooth and creamy.
NOTE: If you chop up the almond bark in small pieces, it will melt faster and not burn as easily.
It’s spring Break…
Get a little messy, have some processed sugar, and break some rules. Heck, you could even become an almond mom, too. Congrats if you do! I can’t wait to hear about it 🤓!
