Gluten-Free Apple Fritters with an Orange Glaze (Bear Claws)

Holy fritters, Batman!! These stinkin’ gluten free apple fritters are so warm and deliciously apple; then add a fresh orange glaze to it? You devil, you! I am so in love with these fritters, I know you will love them too! They will fly off the counter top and you will be off to next-level cooking status. I like to call it, next-level Mommy-ing.

Look, it’s not always easy to wake up and start breakfast. I totally understand. I mean, I have been known to breakfast all times of days….but that’s besides the point. Once you have all your ingredients out and ready, it’s like bam-bam-bam done! Then you may want to make more cause the people love them. Remind them how much gluten (lol, none!) is involved after they tell you your the best cook ever!

This might be the healtiest Bear Claw you have ever encountered. I know it is for me! This does give me more reason to make them 🥰😛.

Being prepared keeps the cook happy! Get all ingredients on your workbench. Grab a 2 small mixing bowls, cutting board/knife (for apples), a cast iron pan and some measuring cups.

Start your stovetop on medium under your cast iron pan. Add 2 cups of coconut oil and let the “white mountains” melt. By the time your done mixing the batter together, this oil will be ready to decrease to low heat.

Note: I do use a Gas stovetop so mine will be hotter naturally. You will know when to turn down your heat if your fritters are brown on the ends. We want GOLDEN!

In a mixing bowl, beat eggs and milk together with a whisk until no more egg white is left.

Put a sifter on top of your bowl and sift together oat flour (if it is not fine enough to go through, that is okay, just make sure there are no chunks in the flour), baking powder, and salt. Add 1 teaspoon of coconut oil to the mix.

Slice up the apples and drop into the batter. Mix well. Batter should be thick. Sprinkle more oat flour if the batter is thin, and add a sprinkle at a time until thick.

Drop a 1/2 cup of batter in oil and cook for about 2 minutes on each side, until golden brown. Drain and put to the side.

In your other mixing bowl, add milk, a squeeze of fresh orange juice, and powdered sugar. This should also be thin enough to pour but thick enough to stick to your fingertip. Drizzle over warm fritters and dive in!!

Tips and tricks

  • don’t stress
  • make sure batter is thick like waffle batter but not a paste
  • cut your apples anyway you want; it’s your life.
  • vanilla is optional.
  • use gluten all you want (I support gluten habits), but oat flour is completly gluten free.

Ingredients

  • 2 Cups 2 coconut oil, plus 1 tsp

  • 2 Large 2 eggs

  • 1/2 Cup 1/2 milk

  • 1 Tsp 1 vanilla, or vanilla bean paste

  • 1 1/2 Cups 1 1/2 oat flour

  • 1 Tsp 1 baking powder

  • 1 Tsp 1 salt

  • 2 Medium 2 apples, cut into fries

  • 1/3 cup 1/3 milk, warm

  • 1 3/4 cup 1 3/4 powdered sugar

  • 1/2 large 1/2 orange, juiced (or 4 tbsp)

Notes

  • Unable to save, but can transport soon after and reheat in the microwave for 30 seconds. (put papertowels on the bottom of the transport package to decrease chance of becoming oily)
