Agave Jalapeño Margaritas

Holy Margaritas! I’m in love with these simple, easy, and soo fresh Jalapeno Agave Margaritas! They are perfectly tart and a tad-bit spicy. Made with Agave, they aren’t too sweet and really hit the spot, especially for those warm days when you need to quench your thirst!

The margarita story!

I have so many memories when it comes to Margaritas (not just the Jalapeno Agave Margaritas!). One in particular really sums up how much my Husband loves my ‘Rita’s.

It all started one evening during the dead of Summer in Texas. Margaritas were on my mind. If you’ve ever been to Texas during the summer, you know it may seem like you are really in the desert but with a great view. The heat is dry with little to no wind, but if you have wind…it’s still too hot. Trees, grass, and plants spontaneously catch fire because dry was mixed with heat for too long. —ok, you got the point, 😁? It’s hot!

On this particular Summer day, my husband was mowing the yard, which is about 5-7 acres around our house, to mow, weed eat, and trim. He typically does this madness by himself during the day. What’s better than a cold glass of iced tea after being in the excruciating heat? A MAR-GA-RITA! That’s what.

I had about 400 limes anyway 🍋‍🟩, so I hand-squeezed them into a pitcher (as I usually do, because it’s the best), added some tequila, a dash of sugar, and triple sec. Oh, and I used a LITER of tequila. I had friends coming over, so I wanted to make sure there were enough for everyone.

Famous last words…

He sticks his head in the door to ask for something to drink, and I say, “Oh! I have the perfect surprise!” These were the famous last words. Sitting down at the outside dining table, he kicks off his shoes. (See, he knows not to come inside filthy.) He lays in this chair like a rag doll, exhausted. I bring him a pitcher of Rita’s and a glass of ice. I run back inside to grab some things…but I end up getting distracted.

Later…

I grab a glass and go outside to sit down finally. The minute I plop in that chair, I see the empty pitcher. Oh no… “babe, did you just drink all the Margaritas?” Kevin- “Yeah, they were really good! Will you make more?” Me- “Oh no, oh no. Ummmmmm. Are you kidding me right now?” Kevin — “No, they were so good! Lisa, I just got done mowing and was so thirsty! Plus, you didn’t bring me any water.” Me —-“Oh my God, Kevin!! There was a liter of tequila in that pitcher!!” Kevin— “Noooooo.” (He cocks his head) “Really?!” Me —-“Uh, yeah. This is not good.” I nod, knowing I’m done for the night. It’s babysitting time.

Kevin, such a sweet husband, just laughs and goes with it. Our friends came over, I had to explain to them where their Margaritas went, Kevin laughs again. They grab a beer, sit down with their food, and we talk until dusk. Not surprisingly, in mid-sentence, Kevin starts slurring. I can’t even understand what he’s saying. Luckily, the kids are in bed now, but our friends are there for the show (thinking this is hilarious). His jumbled words are not short of annoying to me but hilarious to everyone else. I was almost done taking care of the handicapped for the night when he decided to jump on the trampoline.

No night should be complete without a good old fashion run around the yard?

OH, but naked would be better! Yes, you heard it here… naked on the trampoline.

I couldn’t take anymore, so I called it a night. I told him, “It’s time to go in. The night is over. I’m tired.” He responded, “I’m just going to put the tractor up.” So I said, “OK,” and headed into the shower.

Not too long later, I roll into bed, exhausted, thinking, “Goodness, where’s Kevin?” I look outside and all around and can’t find him. I call, but no answer. I keep looking, but I don’t find him. Then I lay down, waiting.

Well, he proceeded to take that tractor and make a trail down in the pits of our property. Forgetting about the deeply grooved creek (about 30-40 feet down), he runs straight into it, stopping at the edge of the creek below the front tires.

This is what happens when you’re unsupervised.

He suddenly remembered where he was and screeched to a stop. Luckily, he remembered at the last minute and was able to back up and drag his insane-ness home…naked.

So, if I haven’t taught you much today, I hope you find that “tequila really does make your clothes fall off!” On a tractor, that is 😆. Luckily, THIS recipe isn’t this strong. It is perfectly delicious with the perfect amount of alcohol.

Luckily, nothing happened. No kid saw the ridiculousness, no one got hurt, and I still have a husband (dressed every day). Although he did learn, he knows better than to trust my Margaritas! Rightfully so!

He now gets a fat glass of iced tea when he gets done. Poor guy. He hasn’t made the mistake since 😅.

Ah, I love when a food or drink reminds you of a great time 🙂 I like to close my eyes and dream and keep them closed of those days. 🤣😉

how to make jalapeno Agave Margaritas!

The first matter of action is to say that no amazing Margarita comes easy. I wish. I have tried a million different ways to do this, and squeezing the lime really is the best way to do it. It can’t be substituted. That fresh lime only comes from a fresh lime 🍋‍🟩 😊.

This Jalapeno Agave Margarita is perfect the way this recipe reads. You can always add more Tequila if you like it stronger (by adding 1 more cup) or spicier (adding more sliced jalapeños to the syrup). Here is how I make my Jalapeño Agave Margaritas (mild):

Start with getting all your supplies and ingredients out.

Grab a small saucepan and make the jalapeño agave syrup. Add the agave, water, and sliced jalapeño. Let it come to a light boil and cool to room temperature while you assemble the rest.

Add the lime juice, blanco tequila, and triple sec in a pitcher.

If your limes are not juicy, roll them on the counter to loosen the pulp or heat them in the microwave for 10 seconds until slightly tender. If possible, use real lime juice.

Add jalapeño syrup to the tequila mix, stir, and it’s ready to drink.

Make sure the jalapeño syrup has completely cooled before pouring it into a glass pitcher. The glass will crack with the extreme temperature changes, and the pitcher and the new mix will be all over the floor. I speak from experience 😆.

To sugar the rim, get 2 small plates.

Put 2-3 squirts of agave on one, then about 3 tbsp of sugar on another. Tip over the glass, rub the rim in the agave, then dip and rub circles in the sugar.

Tip back and fill with ice, then jalapeño marg mix.

Garnish with limes, jalapenos, and cilantro, and enjoy! I love the cilantro in it. Cilantro helps give it a fragrance that adds a lot of paz-zow! More importantly, it is really pretty 😍. Pretty is important.

My favorite Drink

I love Margaritas. They make the world better. If necessary, they could bring world peace. I keep telling my work, “If you want employee satisfaction, consider a Margarita machine.” No one listens to me. Do they think I’m joking?

Agave Jalapeño Margaritas

Tart and slightly spicy with cilantro and lime to garnish, making this not only pretty but delicious.

Ingredients

  • 2 Cups 2 lime juice, from limes

  • 2 Cups 2 blanco tequila (of your choice)

  • 1 Cup 1 triple sec

  • Jalapeño Agave Syrup
  • 1/3 Cup 1/3 Agave syrup

  • 2 Cups 2 filtered water

  • 1-2 Large 1-2 jalapeños sliced (1=mild, 2=medium, 3=spicy)

  • Sugar Rim
  • 2 Tbsp 2 agave

  • 3 Tbsp 3 granulated sugar

  • cut limes, sliced jalapeños, and cilantro to garnish

Directions

  • Start by getting all your supplies out. Grab a small saucepan and make the jalapeño agave syrup. Add the agave, water, and sliced jalapeño. Let it come to a light boil until the jalapenos have darkened and the syrup has disappeared. Let it come to room temperature while you assemble the rest. (NOTE: for mild spicy slice 1 jalapeno; for medium, slice 2; for hot, slice 3)
  • Add the lime juice, blanco tequila, and triple sec to a pitcher. If your limes are not very juicy, roll them on the counter to loosen the pulp or heat them in the microwave for 10 seconds. If possible, use real lime juice.
  • Add jalapeño syrup to the tequila mix in a pitcher, stir, and it’s ready to drink. NOTE: make sure your syrup has cooled before pouring.
  • To sugar the rim, get 2 small plates. Coat one plate with agave, then about 3 tbsp of sugar on another. Tip over the glass, rub the rim in the agave, then dip and rub circles in the sugar. Tip back and fill with ice, then mix the jalapeno marg mix. Garnish with limes, jalapenos, and cilantro. Enjoy!
