Cottage Cheese Berry Breakfast Bake

This Cottage Cheese Berry Breakfast Bake is easy to make, healthy, and can fill up those bellies in the morning! Sweet and savory, it reminds me of French Toast or a Crepe with berries. Sharp berries in a savory eggy layer almost have a pudding feel. Made with whipped cottage cheese, eggs, and rolled oats… it is not only yummy but full of lean and healthy ingredients!

How to make Cottage Cheese Berry Breakfast Bake (with video)

When I say easy, I mean easy! You can blend the ingredients, throw on the fruit of your choice, and bake! Done!

Gather ingredients and your blender. This is my favorite blender to work with–and I’ve had it for years! You will also need a bowl, measuring cups, and a glass dish. Preheat the oven to 400 degrees.

In your blender, add cottage cheese, oats, eggs, maple syrup (sub honey), a dash of cinnamon, and vanilla. Blend until smooth, about 20-30 seconds.

Pour into a glass dish and place berries of your choice on the top. These berries can be fresh or frozen.

Bake for 20-25 minutes until the center is firm. Let cool for a couple of minutes, eat warm, and enjoy!! Add syrup, powdered sugar, or even more fruit. Voila! You have a healthy breakfast!!

Ingredients

  • 1 1/2 cups 1 1/2 cottage cheese (preferably 4% or higher milk fat)

  • 1/2 cup 1/2 rolled oats

  • 2 whole 2 large eggs

  • 1/4 cup 1/4 real maple syrup

  • 1/2 tsp 1/2 cinnamon

  • 1/2 tsp 1/2 vanilla or vanilla paste

  • 1 cup 1 berries

  • (optional) powdered sugar and maple syrup

  • Save it in the refrigerator for up to 2 days, wrapped well with plastic wrap.
  • To reheat, place in the oven for 25 minutes at 400 degrees.
