
This French toast casserole has been the top of my breakfast list! It’s savory and sweet, but really, not too sweet, fills you up, and absolutely delicious! The additive of blueberries, pineapples, and Nutella gives it such a diverse flavor profile, I drool just looking at it.
I thought at first that this may be too sweet for breakfast, but the tartness from the pineapple, sweetness of the Nutella, and the wholeness of the egg makes it perfect! It’s quite filling!
What’s involved in this French Toast CASSerole.
It’s really quick to put together. This is one you can do the night before but honestly, that’s best for really stale bread. I used about 3 day old croissants. They weren’t hard but they weren’t soft (that’s what she said). So, with that said, it depends on how old your bread is. You’d also be quite surprised to see how forgiving this casserole is.
You can use any bread you want, I just thought these croissants would be beautiful and buttery. Buttery makes everything better. Amen.

Ingredients that can trade out.
If you trade out the Nutella for anything else besides Nutella…well… I’m speechless. Your healthcare provider would not recommend that (lol). Seriously, I may disown you (haha).
- blueberries and pineapple: for me it’s the perfect pair of sweet and tart. Although, peaches and blueberries, or apple and cinnamon would also work well. Fruit is definitely needed though. It really completes it and takes it to another level
- Stale bread: any stale bread will work. If it’s not stale, then don’t overnight the recipe. It will absorb faster.
- Milk: any milk will work, yet, the higher in fat it is the better it will marry together.
- Brown sugar: you could definitely use a baking sugar alternative. Just use one you know will bake well. My first go-to would probably be swerve; the ratio to cooking is simple too.
- Whole egg: if you wanted to just use egg whites, that would change a lot. You would find a pretty dense casserole. I recommend the whole egg. You can splurge this one time, right? 😝
Let’s make this Blueberry, Pineapple and Nutella French Toast Casserole

This will take about 10 minutes to assemble and about 40 minutes to cook.
- First, start with preheating the oven to 375.
- Get all your supplies out on your table (I tend to get frustrated if I’m searching everywhere for items)
- In a casserole dish (9×12) tear up the croissants in 3rds (like this recipe did) or 1/2s
- In a medium bowl whisk all 14 eggs, milk, cinnamon, vanilla, and brown sugar.
- Once mixed well, pour over croissants and toss around. Leave them to soak up the egg mix while the oven is preheating.
- After it has absorbed a bit, dollop the top with tablespoons of Nutella. Fold in just a bit.
- Add fruit to the top.
- Cook for 40 minutes uncovered. It will be puffy, let it rest for at least 10 minutes.
- Once cooled, spread more Nutella on top and powdered sugar.
- ENJOY!
This will feed up to 8 hungry (and happy) people.

The perfect Breakfast
I was worried at first it would be too sweet for the morning but you can reduce the amount of Nutella if that’s an issue. It’s always something you can put on the side and let others decide how much they want. Otherwise, the eggs feel wholesome and filling, the fruit is sweet and tangy, and the Nutella is a sweet surprise!
