Grape-Jelly Pulled Pork

Equipment

  • 1 cast iron To braise the meat
  • 1 crock pot Can use a clay pot or pressure cooker

Ingredients
  

  • 2 Lbs pork shoulder Or pork butt (names can be interchanged)
  • 2 Tsp butter or oil for braising
  • 2 Cups grape jelly
  • ½ red onion
  • 6 Whole pepperoncini’s

Instructions
 

  • Using your pan or cast iron, turn the stove top on high heat. Put oil in pan and braise or burn the sides and edges of the pork flank. Salt and pepper.
  • I like to line my crock pot with plastic liners for easy clean up. Place your braised meat inside the crock pot, along with the grape jelly, sliced onions, and pepperoncini’s. I pour a little of the liquid from the jar of pepperoncini’s as well.
  • Cook low for 6-8 hours. Longer the better. Assemble after breakfast, put on low and it will be ready when you are that night. Make sure to use 2 forks to tear apart meat (pull) and take off fatty pads and bones.
  • Note: if using a pressure cooker, this could be done in approx 30 minutes, depending on the pressure cooker you have. See your manufacturer’s instructions.
