Chocolate Mini Cupcakes

Equipment

  • Stand mixer or mixing bowl.
  • 2 mixing bowls
  • spatula

Ingredients
  

  • 2 ½ cups flour
  • ¾ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup softened butter
  • 2 cups sugar
  • 2 large eggs
  • ½ cup whipping cream
  • 2 tsp vanilla
  • 1 cup sour cream

Instructions
 

  • Preheat oven for 325 degrees. Whisk the first 4 ingredients in a mixing bowl. Put to the side.
  • In a stand mixer (or a different bowl if you don't have a stand mixer), blend butter and sugar together. Add eggs one at a time to mix well. Mix cream, vanilla, and sour cream together.
  • While adding wet ingredients, add dry ingredients a little at a time, mixing well.
  • Bake for 10-15 minutes or until a toothpick runs clean.
