Yeah, baby! Here is what you’re going to do. First, get that crock-pot out, and dust it off. Hey, you can also use a pressure cooker or a clay pot— all good options.
Then we will cook this pork shoulder all day in grape jelly and peppers, if possible. I like to braise the meat and throw this in the pot right after breakfast so I can forget about it later.
How to throw this together:
First, braise the meat. I have tried to skip this step before, which is totally an option but it does change things. Those crispy bits and tender center really do make a difference. No one will cry about it you do skip it.
This is where you throw and go. The best feeling ever.
Take 2 forks and pull off the fat sacs. There also may be some bones. Keep forking around to make sure all chewy/fatty pieces have left the pot. Yuck.
So now, your basically done with dinner. Now it’s just assembly. I absolutely LOVE when it’s 5:00 and I have nothing to do but put dinner together. Such a glorious feeling!!
I made mashed potatoes to go with it. Put cheese on the meat and red onion to give a crunch, maybe even a little horseradish would set nice too. I couldn’t figure out if I should put the meat on the ‘taters or the cheese on the bread, or the bread to dip in the ‘taters. So many decisions here, it can be overwhelming!
It is homemade Ciabatta bread.
I love making bread. Truly am not prejudiced against a certain type of bread. Just love forms of sourdoughs. I like them simple and clean. Nonetheless, if you buy the ciabatta bread from the store you’ll be almost just as happy. Honestly, there isn’t a replacement for homemade bread, it’s the truth.
ANY Bread will work.
Other good options would be a brioche bun or even just a regular hamburger bun. I’m all about using what is available and resourceful.

Grape-Jelly Pulled Pork
- 1 cast iron To braise the meat
- 1 crock pot Can use a clay pot or pressure cooker
- 2 Lbs pork shoulder Or pork butt (names can be interchanged)
- 2 Tsp butter or oil for braising
- 2 Cups grape jelly
- ½ red onion
- 6 Whole pepperoncini’s
- Using your pan or cast iron, turn the stove top on high heat. Put oil in pan and braise or burn the sides and edges of the pork flank. Salt and pepper.
- I like to line my crock pot with plastic liners for easy clean up. Place your braised meat inside the crock pot, along with the grape jelly, sliced onions, and pepperoncini’s. I pour a little of the liquid from the jar of pepperoncini’s as well.
- Cook low for 6-8 hours. Longer the better. Assemble after breakfast, put on low and it will be ready when you are that night. Make sure to use 2 forks to tear apart meat (pull) and take off fatty pads and bones.
- Note: if using a pressure cooker, this could be done in approx 30 minutes, depending on the pressure cooker you have. See your manufacturer’s instructions.
