This week was our 7th wedding anniversary! I have to say, it does not feel that long. Although we have gone through so many challenges, it has only made for growth and discovery of ourselves and our relationship. I love that our story has had so much growth and that we have been able to keep believing in each other. Relationships take so much work. Sometimes it’s easy, sometimes it’s much more challenging. By challenging I mean stepping out of comfort zones, taking risks, but also taking a look at yourself. God has given us so much to live for every day, it can be easy to see all that is going wrong first (#firstworldproblems) rather than what is going right. It is important to keep in forethought WHY we do what we do. To keep INTENTION in mind always.

I certainly don’t know everything about marriage. I hope I will learn how to do this better forever until the day I die. But what I have learned so far is INTENTION and LIVING UNDEFINED is one of the biggest assets in our marriage. What does living undefined mean anyway? It means enjoying these BEST moments that we are given, with whomever we are given it with. Cut out the expectations and just enjoy the moment. I find it is easy to get hung up on what is irritating or not fulfilling. We can’t change someone else, but we can love them for who they are. Gosh, it’s really been about treating others like you would want to be treated. That’s all my 7 years of wisdom I have received so far, haha!
gratefulness is why.
This isn’t hard for me. It is easy to see I have the most loving, passionate, caring, smart husband. He is the hardest working person I know. He loves his family more than life itself. He is your “ride or die” friend and family, or in my case husband and father. I never have to worry about feeling unsafe or any unknowns. He protects us well and wants the best for every person in our family, whether they are blood-related or not. He truly is unstoppable. I am so grateful for him. He is my reason “WHY”. God has given us so many gifts in our lives that really and TRULY it is our FAMILY that is our “WHY” we do what we do every day.

We all have our love language. One way I portray my love typically with food. Valentine’s day, anniversaries, daily, whenever it may be, food is a love I love to share. Below I have made some MINI chocolate cupcakes. They were such a hit and look pretty too. Check out the recipe to see how they are made!
Nothing hurts a cupcake more than being dry or crumbly. This calls for a soft and flavorful bite!
Roll out some fondant, make a favorite shape. It’s can really make the difference in deciding to have one or not.
You don’t have to always master a shape. Cheat and find some cookie cutters.
Pipe on the icing and VOILA! Maybe melt some chocolate and flick-it around with a whisk across the top to add some WOW. Either way, they are so pretty.

Chocolate Mini Cupcakes
Equipment
- Stand mixer or mixing bowl.
- 2 mixing bowls
- spatula
Ingredients
- 2 ½ cups flour
- ¾ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup softened butter
- 2 cups sugar
- 2 large eggs
- ½ cup whipping cream
- 2 tsp vanilla
- 1 cup sour cream
Instructions
- Preheat oven for 325 degrees. Whisk the first 4 ingredients in a mixing bowl. Put to the side.
- In a stand mixer (or a different bowl if you don't have a stand mixer), blend butter and sugar together. Add eggs one at a time to mix well. Mix cream, vanilla, and sour cream together.
- While adding wet ingredients, add dry ingredients a little at a time, mixing well.
- Bake for 10-15 minutes or until a toothpick runs clean.

Vanilla Cupcake Icing
Equipment
- Stand mixer with the whisk attachment.
- Or, a mixer and medium sized bowl.
Ingredients
- ¾ cup whipping cream
- ½ cup sugar
- 1 cup powdered sugar
- 1-2 tsp vanilla
- 6 drops red food coloring
Instructions
- Add ingredients to your bowl. Whisk until desired stiffness.
- Drizzle melted chocolate across the top or cut out some fondant shapes. Have fun!
